Blueberries

Sweet, juicy, fresh blueberries are one of my all time favorite little fruits. They are so delicious in desserts, on oatmeal, in salads and grain dishes, pancakes, smoothies, marinades, and just plain on their own eaten by the handful (or multiple handfuls.)

  • Blueberries contain one of the highest amounts of antioxidants among all fruits, vegetables, spices, and seasonings. These antioxidants are essential in preventing free radical damage to our cells by helping to protect our beautiful bodies from oxidative stress.
  • Studies have shown that eating blueberries regularly helps to lower blood fat levels, in turn reducing cholesterol and blood pressure.
  • Blueberries have a low glycemic index, and therefore are an ideal sweet treat for maintaining blood sugar levels.
  • Blueberries may also help with memory loss. A study from the University of Reading and the Peninsula Medical School in England found that blueberries reverse age-related memory loss thanks to all their super antioxidant power.

Vegukate Tips:

If you can, try to buy organic, all berries are usually quite pesticide ridden.

Store ripe, dry blueberries in a covered container in the refrigerator, where they should keep for 3-4 days.

Freezing blueberries won’t destroy and of their beneficial properties; so stock up in the summer and enjoy fresh picked berries in the winter (when January store-bought blueberries don’t quite make the cut).
