Oatmeal Raisin Chocolate Chip 4 Ingredient Cookies

Some days you just need to bake.
You especially need to bake on days that it’s raining.
And you absolutely must bake days that it’s raining in Arizona, which is about ten days out of the year.
That’s why today I baked these delectable 4 ingredient cookies.
Yes, that’s right. Rain in the desert and cookies made with only four ingredients. It’s all just too good to be true!
But it’s not; because these cookies are real, and I can assure you that they are delicious! Baking is such a science that you may question the simplicity of only four ingredients. Every dessert recipe always seems to have such precise measurements, that god forbid you mess up, your dessert ends up turning green or tastes raw. Right?!
So, baking can be kind of a scary science. That’s why these cookies are almost faux-baking; they’re so simple and there is just no way that you could mess them up. How great is that? Not to mention they’re made without the use of any refined sugar or gluten.
The key is to use very ripe bananas, (the browner the better) and basic rolled oats. You can get creative with your cookies and take out the chocolate chips to have oatmeal raisin cookies or add in some nuts for a bit of crunch.

Oatmeal Raisin Chocolate Chip 4 Ingredient Cookies
2 ripe bananas, mashed
1 ½ cup rolled oats
1/3 cup dark chocolate chips or cacao nibs
½ cup raisins
dash of cinnamon (optional)
Preheat oven to 350° F.
In a large bowl combine mashed bananas, rolled oats, chocolate chips, raisins, and cinnamon. Stir until all ingredients are thoroughly mixed. Use a tablespoon to scoop out batter and place on cookie sheet.
Bake for 15-20 minutes. Remove from oven, let cool, and store in airtight container. Cookies will keep for about a week.
*I’m weird and I like to have cold cookies, so I keep mine in the refrigerator. They taste super delicious cold!

Hi Nicole, I’ve never tried freezing them, so I’m not sure how they would turn out. They’re so simple to make fresh, that when my cravings strike, I can always whip them up in 20 minutes or so! If you try freezing them, let me know how they turn out!
