2 Ingredient Raspberry Chia Seed Jam

Here’s a delicious way to use all those summer berries you’ve been picking – 2 ingredient chia seed jam!

Made with just chia seeds and fresh raspberries, this is the ultimate homemade jam to scoop onto oatmeal, yogurt, chia seed pudding, or (my favorite way!) a peanut butter and raspberry chia seed jam open faced sandwich – life changing.

Raspberry Love.

I looooove fresh raspberries in the summertime. They’re a slightly sweet, fiber-filled berry that can be eaten by the handful or incorporated into plenty of delicious recipes.

These berries are in season June throughout July across the United States. In Oregon, raspberries are at their peak season riiiiight now – which is why I can’t stop eating them! I’ve actually even picked a few around my work neighborhood growing right there on the street – totally foraging at it’s finest!

Raspberries are one healthy little fruit! They’re jam packed with an impressive amount of antioxidants including anthocyanins, flavonols, tannins, and hydroxybenzoic acid derivatives, to name a few. Antioxidants are vital to our diet, as they help to reduce free radical damage to cells and whole body inflammation. They’re also a good source of vitamins C, K, and E, manganese, copper, folate, and fiber, too. In fact, just one cup of raspberries contains roughly 30% DRI/DV of fiber.

Raspberries coupled with fiber-rich chia seeds creates this sweet and utterly easy chia seed jam. Simply mash raspberries, add chia seeds, and let sit. In just a few minutes, you’ll have a simple and sweet jam to enjoy on all your favorite summer things!

2-Ingredient Raspberry Chia Seed Jam

Ingredients:

2 cups fresh or frozen raspberries
1/2 Tbsp. chia seeds, plus more as needed

Directions:

Add raspberries to a bowl and use a fork to gently mash.
Add chia seeds and stir to completely combine.
Let chia jam sit for 10 minutes, staring every now and then.
If chia jam is too thin, add in another sprinkle of chia seeds.
Store chia jam in an airtight jar in the refrigerator where it will keep for 3 days. Serve with a hearty piece of bread and peanut butter for the ultimate PB&J upgrade.

Notes:
